
This recipe comes from Judy Rogers, former chef of The Union Hotel in Benicia CA
4 cups all purpose flour
2 TB baking powder
1 tsp salt
1/2 cup salted butter
2 cups plus 2 TB whipping cream
melted butted as needed
Preheat oven to 400 degrees.
Stir together flour, baking powder, and salt. Cut in butter, leaving it in very coarse shards.
Pour cream in gradually, stirring, then quickly knead to make a stiff dough. do not overwork.
roll out dough 1/2 inch thick on a lightly floured board. Cut into squares or use a glass or round cookie cutter.
Dip top of biscuit into melted butter.
place the biscuits on an ungreased cookie sheet on the lowest rack of oven and bake 18 minutes.
Serve immediately.
