1 head of romaine lettuce, washed, dried and torn into bite sized pieces, chill until ready to serve
Croûtons, homemade or store bought
2 jars marinated artichoke hearts, preferably Cara Maria brand, chopped
Dressing:
Juice from both jars of artichoke hearts
2 tsp lemon juice
2 tsp garlic powder or combination of garlic powder and garlic salt
2 egg yolks
2 tsp Dijon mustard
1/3 cup of olive oil
Canned Parmesan Cheese enough to thicken (note: do not use fresh Parmesan Cheese, it doesn’t work!)
Whisk all ingredients together, slowly whisk in Parmesan Cheese until slightly thickened. Refrigerate until serving salad.
Note this dressing will thicken a lot in the refrigerator. If too thick, when ready to serve, thin with olive oil or thicken with more
Parmesan Cheese.
In serving bowl, toss lettuce, artichoke hearts, and croûtons, add dressing until entire salad is lightly coated with dressing.
Serve. This salad will not keep long after the dressing is added.
