Spaghetti with Braised Kale


This is a wonderful comfort food dish. Lots of garlic, no meat for those who are vegetarians, and is simple to prepare.
Probably the best kale recipe I have found to date. But I am always looking. Because it is so good for you.

Recipe for Spaghetti with Braised Kale

Nutritionally, kale is  a highly nutritious vegetable with powerful antioxidant properties; kale is considered to be anti-inflammatory.

Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. Because of its high vitamin K content, patients taking anti-coagulants such as warfarin are encouraged to avoid this food since it increases the vitamin K concentration in the blood, which is what the drugs are often attempting to lower.

Kale, as with broccoli and other brassicas,(Kale or borecole is a form of cabbage (Brassica oleracea Acephala Group), contains sulforaphane (particularly when chopped or minced), a chemical believed to have potent anti-cancer properties.


St John’s Club Kale Soup


Not too long ago I was watching a show with Emeril Lagasse and he said this was his favorite soup from his home
town. I knew I had to try it. Also I had some fresh Kale on hand. He was right! It is a winner. The recipe calls for
either chorizo or andouille sausage. I used andouille. It is also very easy and comes together quickly.
